Named for my daughter, Sofya’s Sauerkraut continues to evolve as she grows. Little tweaks to the recipe prompt the updated version, though the essence remains the same– red cabbage and caraway with other wonderful ingredients. Red cabbage is higher in natural sugars than its green cousin, so this kraut has a touch of natural sweetness that can add appeal for fermentation newbies.
